Cheesy Bacon And Leek Mashed Potatoes |

Just a little somthing that popped into my head Ingredients:
2 lbs red potatoes with skins on |
1 cup leeks cleaned and sliced into half rounds |
4 strips bacon cooked and crumbled |
1/2 cup finely shredded chedder cheese |
1 tbls butter |
salt and pepper to taste |
Directions:
1. Boil potatoes until fork tender 2. saute leeks in butter 3. drain and mash potatoes leaving them slightly lumpy 4. mix potatoes, leeks and salt/pepper and put into a 2 quart cassarole 5. top with cheese and bacon 6. bake at 400F for 15 min or until cheese is bubblely and golden |
