Great party appetizer, they won't last long. !! Ingredients:
2 cups shredded queso asadero or monterey jack cheese |
1/2 cup heavy cream |
12 tortillas cut into 8 wedges each |
vegetable oil to fill pan 2 inches deep |
1 cup grated queso cochita or parmesan cheese |
1 to 2 jalapeno peppers minced or as you like |
1 lg tomato chopped |
1/2 red onion chopped |
Directions:
1. Prepare sauce by combining cream and queso asadero cheese in saucepan stirring over medium low heat and cook and stir constantly to melt cheese. 2. Heat oil in heavy duty pan till it bubbles and fry tortilla wedges to lightly brown them, about 45 seconds. 3. Fry in batches and don't crowd, drain on paper toweling. 4. Transfer weges to serving platter and sprinkle batches with a little of the cochita cheese. 5. Cover to keep warm. 6. When all are fried, top with melted cheese sauce, remaining grated cheese, peppers and tomato and onion. 7. Serve immediately! |
