Cheesey Tofu Spinach Dish

Spinach cassarole. Modified kelbian recipe Cheesey Spinach Dish I replaced cheddar with 50% light cheddar, exchanged the beef for tofu & removed the cottage cheese.
Ingredients:
1 lb. tofu
1 chopped onion
1/2 lb. mushrooms
1 cup fat free sour cream
1 cup tomato sauce
20 ounces frozen chopped spinach
1 cup parmesan cheese
1 cup cheddar cheese
Directions:
1. 1 Drain Tofu (Optional: For taste add salt, pepper and garlic salt or minced clove. 1 teaspoon each).
2. 2 Add onions & mushrooms and cook 5 minutes, stirring.
3. 3 In large bowl combine tomato sauce, sour cream. (Optional: 1 teaspoon basil and 1 teaspoon oregano).
4. 4 Stir in tofu mixture.
5. 5 Press out liquid from thawed spinach.
6. 6 Add 1/2 of the cheddar cheese and 1/2 of the Parmesan cheese.
7. 7 Place in 9 x 13 inch greased baking dish.
8. 8 Cover with remaining cheese.
9. 9 Bake at 350 degrees for 30 minutes or until hot through.
10. 10 Serves 12.
