Great side dish for the summer barbecues. These potatoes have great flavor.You could probably put on grill rather than broil! Ingredients:
11/2 lbs idaho/russet potatoes |
1/4 c butter,melted |
1 tbs chopped fresh rosemary |
1 tbs chopped fresh chives |
1/2 c chredded parmesan cheese |
Directions:
1. Heat broiler or grill. Using crinkle cutter,cut potatoes into 1/4 thick slices. In saucepot over high heat,bring potatoes and enough salted water to cover to a boil. Cook 8 mins. or until tender. 2. Remove potatoes;place in ice bath for 5 mins. Drain and pat dry. 3. In bowl,combine potatoes,butter,rosemary and chives;toss well. 4. Season potatoes with salt,if desired;arrange in single layer on baking sheet. Sprinkle with cheese. Broil or Grill 2 mins;turning once. |
