Wonderful broccoli,mushroom,rice and cheese casserole. Goes with almost any entree. This is from Rachael Ray. Ingredients:
3tbs butter,plus extra for the dish |
2tbs flour |
1/2lb shitake or baby bella mushrooms |
1/4c onions,chopped |
2 cloves garlic,finely chopped |
1/2tsp garlic powder |
1/2tsp cayenne pepper |
11/2c heavy cream |
1/2c chicken stock |
1(10oz.) box frozen chopped broccoli,thawed and drained |
2c shreaded cheddar-monteray blend |
3c cooked rice |
salt and pepper |
Directions:
1. Preheat oven to 425 2. Butter casserole dish. In a large pot,melt 3Tbs butter and flour over med heat till golden in color to make a quick roux. Roux should resemble the color of peanut butter. 3. Add mushrooms,onion,garlic,garlic powder,cayenne pepper,heavy cream and chicken stock. Add broccoli,1c of cheese and rice. 4. Season with salt and pepper to taste. Pour into buttered 11/8 qt. oval casserole dish and top with remaining shreaded cheese. Bake until cheese is melted and golden,about 20 mins. |
