I cocnocted this recipe when I needed to do something different with eggplant. My family gobbled these up. Besides appetizers these could be used and put into a pasta dish or made into a vegetarian wrap! Ingredients:
2 large eggplants with peel on |
olive oil |
garlic powder |
grated romano or parmesan cheese |
dry basil |
salt and pepper |
thin sliced swiss or mozarella cheese, cut into quarters |
Directions:
1. Preheat oven to 425 F 2. Cut eggplant into uniform round slices about 1/2 inch thick 3. Lay each slice on a baking sheet to fill up sheet 4. brush each slice liberal with olive oil 5. Sprinkle on salt and pepper, basil, garlic powder and grated cheese 6. Bake until soft and golden ( 30 to 45 mins ) 7. Carefully remove slices and place piece of cheese on an eggplant circle, top with another to make little eggplant sandwiches 8. Serve as an appetizer or side 9. Reheats well. 10. These are really delcious!! |
