Easy and quick. Great use of left overs! Freezes well, my family loves it! Ingredients:
2 cups cooked chicken cut into bite size pieces |
1 1/2 to 2 cups cooked rice |
1 can of cream of mushroom soup |
1 cup broccoli in bite size pieces |
3 dashes of your favorite hot sauce |
1/8 teaspoon salt |
1/8 teaspoon pepper |
topping |
1 1/4 cup of grated cheddar cheese. |
1/2 cup sourcream |
1/2 cup mayonaise |
Directions:
1. Preheat oven to 400 degrees. 2. Combine rice, chicken, cream of mushroom soup, broccoli and hot sauce and salt and pepper in a large bowl. 3. Grease a 1 1/2 to 2 quart casserole dish. Pour mixture into the greased dish. 4. Prepare topping, combine cheese, sour cream and mayonnaise. Spread topping on top of mixture in baking dish. Spread topping mixture to 1/2 inch of dish edges. 5. Cook on 400 degrees covered for one hour, then remove cover and bake for another 15-20min or until topping is brown and bubbly with cripy edges. |
