I made this recipe a couple of hours ago. It is waiting to be eaten paciently in the fridge :) I will add a photo as soon as I am able to cut a slice!
Ingredients:
1/4 cup melted butter
1 and 1/2 cups oatmeal cookies crumbs
1/4 sugar
3 large eggs
3/4 cup quark cheese or sour cream
2 tsp vanilla extract
16 oz full-fat cream cheese (room temperature)
9 inch springform pan
1 cup mixed berries (thawed if you use the frozen kind, i do!)
1 tbsp balsamic vinegar
1/2 tbsp whiskey
1/2 cup sugar
Directions:
1. Combine crumbs, melted butter; press onto bottom of 9-inch springform pan.
2. Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended.
3. Add eggs, one at a time, beating well after each addition. Blend in quark cheese or sour cream and vanilla; pour over crust.
4. Bake at 325 degrees for about 1 hour.
5. To make the berries and balsamic vinegar coulis, put the berries and sugar in a pan over low heat until the sugar is melted, add vinegar and whiskey and let simmer for about 15 minutes. Puree the berries.
6. Pour the coulis over the cheesecake after it has sat on the fridge for at least 2 hours.
7. Enjoy!
