Cheesecake Pie for Calorie Watchers |

This no-bake recipe was in my mom's recipe box. Even though this does include a little sugar and butter, she wrote that it only has 150 calories per serving, 4.6 grams fat and no transfats! Ingredients:
2 tablespoons butter or 2 tablespoons margarine, melted |
1 cup graham cracker crumbs |
2 tablespoons water |
2 tablespoons lemon juice |
2 tablespoons water |
1 1/4 ounces unflavored gelatin |
1 egg |
1/3 cup sugar |
1/2 cup low-fat milk |
1 teaspoon vanilla |
2 cups low fat cottage cheese |
Directions:
1. Combine butter, cracker crumbs and water and press into pie pan. Bake at 350 for 5 minutes, then set aside. 2. Combine lemon juice, water and gelatin into a blender and mix. 3. Add egg and sugar and blend then set aside. 4. Bring milk and vanilla to boiling point and add to blender mixture, along with cottage cheese. Blend until smooth. 5. Pour blender mixture into pie shell and refrigerate at least 2 hours until set before serving. |
