This recipe is from an Amish/Mennonite cookbook I bought locally in Lancaster, PA. Haven't tried it yet, but it sounds delicious! Prep time is approximate. Ingredients:
1 (8 ounce) package cream cheese, softened |
1 large egg |
1/3 cup sugar |
1/4 teaspoon salt |
1 teaspoon vanilla |
1 9-inch deep dish pie crust |
1 1/4 cups chopped pecans |
3 large eggs, beaten |
1 cup light corn syrup |
1/4 cup sugar |
1 teaspoon vanilla |
Directions:
1. Combine first 5 ingredients; beat at low speed until smooth. 2. Pour into pastry shell; sprinkle with pecans. 3. Combine 3 eggs and remaining ingredients, mixing well. 4. Spoon over pecan layer. 5. Bake at 350 degrees for 35 minutes or until set. |
