This soup is absolutely delicious, especially if you enjoy pickles. It truly does taste like a cheeseburger, just in soup form. Ingredients:
1/2 cup diced onion |
2 oz. butter |
4 oz flour |
1/2 cup dill pickle juice |
3 cups chicken stock |
1/2 lb cooked ground beef, drained |
diced pickle spears....to desired taste, i use about 1/4 cup |
3 oz. havarti cheese w/ dill (laughing cow works also, if you are looking for a lighter cheese, just add a 1/2 teas. dill) |
1/2 cup whipping cream |
salt |
pepper |
Directions:
1. Saute onion in butter until translucent. Add flour and cook to make a roux. Add pickle juice and then the chicken stock. Cook until smooth and velvety. Add drained beef and continue to cook over low heat. Add chopped pickles. Then add cheese and stir until melted. Finish with cream and cook a few minutes more. Add salt and pepper to taste. |
