This is a great warming soup. Another of my comfort foods. It can be easily doubled for a bigger crowd. Ingredients:
1 lb ground beef |
3/4 c chopped onion |
3/4 c grated carrots |
3/4 c diced celery |
3 t oil |
3 c chicken broth |
4 c diced potatoes |
1/4 c flour |
8 oz velveeta cheese, cubed |
1 1/2 c milk |
1 t basil |
1/4 c sour cream |
salt and pepper |
Directions:
1. In a 5 qt pot, brown beef, drain and set aside 2. Saute onion, carrots, celery and basil in same pan, about 5 minutes 3. Stir in flour 4. Add broth, potatoes and beef. 5. Cover, reduce heat and simmer until potatoes are tender, about 15 minutes 6. Add cheese, milk, salt and pepper. 7. Cook and stir until cheese melts. 8. Remove from heat and blend in sour cream 9. Serve. |
