Ground sirloin makes this flavorful and saves a little fat. Ingredients:
1 tablespoon vegetable oil |
1 medium onion, chopped |
1 medium carrot, peeled and coarsely grated |
2 garlic cloves, minced |
1 1/2 lbs ground sirloin |
1/2 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
1/4 cup ketchup |
2 tablespoons yellow mustard |
2 medium potatoes, peeled and chopped |
2 (14 ounce) cans beef broth |
1 (10 3/4 ounce) can condensed cheddar cheese soup |
1/2 cup shredded sharp cheddar cheese |
Directions:
1. Heat oil in large pot over medium heat. Add onion and carrot and cook for 5 minutes. Add garlic and cook another minute. Add beef, salt, and pepper and cook for 6-8 minutes, or until brown. Drain any fat. 2. Stir in ketchup, mustard, and potatoes and cook 3 minutes. 3. Add beef broth. Bring to a boil, then simmer about 10 minutes. 4. Stir in cheddar soup; cook 2 minutes or until heated through. Garnish with shredded cheese. |
