Cheeseburger Soup

Ground sirloin makes this flavorful and saves a little fat.
Ingredients:
1 tablespoon vegetable oil
1 medium onion, chopped
1 medium carrot, peeled and coarsely grated
2 garlic cloves, minced
1 1/2 lbs ground sirloin
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup ketchup
2 tablespoons yellow mustard
2 medium potatoes, peeled and chopped
2 (14 ounce) cans beef broth
1 (10 3/4 ounce) can condensed cheddar cheese soup
1/2 cup shredded sharp cheddar cheese
Directions:
1. Heat oil in large pot over medium heat. Add onion and carrot and cook for 5 minutes. Add garlic and cook another minute. Add beef, salt, and pepper and cook for 6-8 minutes, or until brown. Drain any fat.
2. Stir in ketchup, mustard, and potatoes and cook 3 minutes.
3. Add beef broth. Bring to a boil, then simmer about 10 minutes.
4. Stir in cheddar soup; cook 2 minutes or until heated through. Garnish with shredded cheese.
