A very simple, filling lunch or snack. Ingredients:
3 -4 broccoli florets, steamed & chopped |
1 plum tomato, de-seeded & chopped |
1 cup white mushroom, chopped |
100 g cheddar cheese, shredded |
225 g self rising flour |
175 ml skim milk |
55 ml extra virgin olive oil |
1/4 cup egg substitute |
Directions:
1. Mix vegetables & cheese together. 2. Add remaining ingredients. 3. Spoon mixture into greased muffin tins. 4. Bake at 400 degrees for 20 minutes. 5. Let sit 5 minutes and serve. |
