From Food editor Joe Yonan. The recipe for corn broth is found here - Corn Broth. Ingredients:
1 teaspoon unsalted butter |
1 teaspoon olive oil |
1/3 cup green onion, cut crosswise into 1/2 -inch pieces (about 2) |
3/4 cup fresh corn (or frozen) |
1/4 cup buttermilk |
1/4 cup corn broth or 1/4 cup vegetable broth or 1/4 cup water |
5 ounces frozen cheese tortellini (about 30 tortellini) |
salt & freshly ground black pepper |
1 tablespoon parmesan cheese, freshly grated (optional) |
Directions:
1. In a medium skillet, combine butter and oil, heat over medium high heat; once butter begins to foam, add green onions and corn. 2. Cook, stirring frequently, until the corn intensifies in color, about 2 minutes. 3. Add the buttermilk and corn broth; bring to a boil, add tortellini and toss. 4. Cover and reduce heat to medium; cook 4 minutes, stirring once or twice. 5. Remove from heat, season with salt and pepper to taste, and garnish with Parmesan cheese, if desired. |
