Cheese Tortellini With Cannellini Bean Sauce |

This bean sauce is to die for!! Ingredients:
1 9ounce pkg. refrigerated cheese filled tortellni |
1 15ounce can cannellini beans (white kidney beans) drained and rinsed |
2/3 cup milk |
2/3 cup red, yellow, and/or green sweet peppers, cut into slivers |
1/4 cup grated parmesan cheese |
1 tsps dried oregano |
1/4 tsps salt |
1/4 tsps ground nutmeg |
1/4 tsps ground black pepper |
parmesan cheese and oregano to top |
Directions:
1. Cook tortellini according to directions. Drain and keep warm. 2. Meanwhile, for sauce, in a food processor or blender combine beans, and milk. Blend until smooth 3. Transfer bean mixture to a skillet. 4. Stir in sweet peppers, grated parmesan cheese, dried oregano ,salt, nutmeg, and black peper. 5. Cook and stir until heated through 6. Transfer pasta to indivdual serving plates 7. Top with warm bean sauce 8. garnish with parmesan cheese, and oregano |
