From Simply salad Ingredients:
1 package fresh 3 cheese tortellini |
1 tbsp olive oil |
1 bag italian blend lettuce |
1/4 cup drained oil packed sun dried tomatoes, cut into thin strips |
5 fresh basil leaves, sliced into thin strips |
vinaigrette |
1/4 cup drained oil packed sun dried tomatoes |
4 tsp balsamic vinegar |
4 tsp red wine vinegar |
1 small clove garlic |
1/3 cup extra virgin olive oil |
kosher salt and fresh ground pepper |
Directions:
1. for salad: cook pasta in large pot of boiling salted water, according to package instructions, about 10 minutes. drain and rinse under cold water until cool. Drizzle with the oil and toss to evenly coat to prevent sticking. 2. Tear the Italian blend into bit size pieces and place in a large salad bowl. Add the tortellini and tomatoes. Toss with the vinaigrette, to taste, until coated. Garnish with basil. 3. For vinaigrette: Place tomatoes, vinegars, and garlic in a blender or food processor and puree until smooth. gradually add the oil until emulsified. season with salt and pepper. |
