Cheese Stuffed Roasted Red Peppers |

A great appetizer when you're grilling! The first step can be done ahead, then just pop them on the grill. Ingredients:
3 large red bell peppers |
1/8 tsp salt |
6 slices fresh mozzarella |
2 tsp extra virgin olive oil |
1 tbl fresh basil |
Directions:
1. Place peppers over medium heat; cook 8 to 10 minutes or until all sides are blistered and charred, turning every 3 to 4 minutes 2. Place peppers in a brown paper bag; fold down top; let stand 5 minutes 3. Carefully peel as much skin from peppers as possible 4. Cut in half lengthwise, remove stems, seeds and ribs, sprinkle with salt 5. Place 1 slice of cheese in each pepper half; drizzle with oil 6. Return to grill; cook additional 5 minutes or until cheese is melted 7. Sprinkle with basil 8. Cut each pepper half in half again 9. 12 servings |
