Ingredients:
3 1/2 tablespoons butter |
4 tablespoons flour |
1 1/2 cups milk |
6 egg yolks |
8 egg whites |
1 pinch salt |
1/8 teaspoon cream of tartar |
1 cup grated cheese (any kind) |
1 teaspoon prepared mustard |
1 pinch nutmeg |
1 dash cayenne pepper |
Directions:
1. Preheat oven to 400 degrees. 2. Melt the butter and add the flour. Stir in the milk gradually. Remove the pan from the heat and add the egg yolks one at a time. 3. Stir in the cheese, mustard, nutmeg and pepper. Add a pinch of salt and 1/8 teaspoons cream of tarter to the egg whites and beat until stiff. 4. Fold the cheese mixture into the egg whites and transfer to the prepared souffle dish. 5. Place the souffle in the oven and immediately reduce the heat to 375° degrees. 6. Bake 25 Minutes. |
