This recipe comes from a fabulous cookbook, Austalia The Beautiful Cookbook . Ingredients:
1 2/3 cups self raising flour |
1/2 teaspoon salt |
1/2 teaspoon cayenne pepper |
2 tablespoons unsalted butter |
4 ounces well aged cheddar cheese, coarsely grated |
7 tablespoons milk, for brushing top |
1 egg |
Directions:
1. Place rack in upper part of oven. 2. Preheat oven to 425°F. 3. Butter and flour baking tray. 4. In a bowl, sift together the flour, salt and cayenne pepper. 5. Using your fingers, lightly rub in butter until mixture resembles coarse crumbs. 6. Stir in cheese and make a well in the center; set aside. 7. In a new small bowl, whisk together the 7 tablespoons of milk and egg. 8. Pour the milk/egg mixture into the flour mixture well. Mix quick and light to make a dough. If dough seems too dry, add a few drops of milk as needed. 9. On lightly floured board, roll out dough to be about 1 inch thick; cut into squares. 10. Place on prepared pan. 11. Brush tops with the 2 tablespoons of milk. 12. Bake in the upper part of the oven until golden and crisp, about 12-15 minutes. 13. Serve warm of at room temperature. |
