With this recipe, you get the look and taste of the creamiest rice dish in half the time!! You can substitute 1/2 cup frozen peas for the tomato.
Ingredients:
1 tablespoon zesty italian dressing
2 tablespoons onions, chopped
3/4 cup instant rice, uncooked
3/4 cup chicken broth, 25% less sodium
1 plum tomato, chopped
2 tablespoons philadelphia cream cheese spread
2 tablespoons parmesan cheese, shredded
1 tablespoon fresh parsley, chopped
Directions:
1. Heat dressing in small saucepan on medium heat. Add onions; cook and stir 3 minutes or until tender.
2. Stir in rice, broth and tomatoes. Bring to a boil. Reduce heat to low; simmer for 3 minutes.
3. Add cheese and parsley; stir until blended. Remove from heat. Let stand, covered for 5 minutes before serving.
