Cheese Ravioli With Pumpkin Sauce |

A different use for pumpkin without the fuss of making your own ravioli. Ingredients:
1/3 cup sliced green onion |
1 -2 garlic clove, minced |
1/2 teaspoon fennel seed |
1 cup evaporated milk |
1 tablespoon flour |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1/2 cup solid-pack pumpkin |
2 (9 ounce) packages cheese ravioli |
2 tablespoons shredded parmesan cheese |
Directions:
1. Saute onions, garlic and fennel seeds in a saucepan with a little olive oil about 3 minutes or until onions are tender. 2. Combine milk, flour, salt and pepper in a small bowl until smooth. Stir into saucepan. Bring to a boil over over medium high heat until thickened, stirring constantly. Stir in pumpkin and reduce heat to low. 3. Meanwhile cook ravioli according to package directions. Rinse and drain. 4. Divide raviolis among 6 dishes. Top with sauce and sprinkle Parmesan cheese , if desired. Serve immediately. |
