My husband was skeptical when I made this, not only did I put this in his thermos for lunch-he thought it would be to messy to eat, but also last time I made a rarebit it was horrible tasting, both he and I were pleased with this, and so was our 10yr old DS who also had it in his thermos. I did add diced ham to theirs and supplied them with a container full of saltines so they could pour it over. Yummy!
Ingredients:
2 cups shredded sharp cheddar cheese
2 tablespoons flour
1 teaspoon ground dry mustard
1/2 teaspoon salt
3 tablespoons butter
2/3 cup hot milk
saltine crackers or toast points
Directions:
1. Combine all ingredients in a blender and whirl at high speed until smooth. Bring water to a boil in a double boiler, reduce heat to simmer, pour in ingredients from blender in double boiler. heat stirring occasionally with wire wisk until melted and hot. Serve over saltine crackers or toast points.
