Cheese & Onion Bread Casserole |

This is a meatless one-dish meal. You could substitute different cheese in this dish, such as pepper Jack for some added heat, or a rich and creamy Fontina. Recipe is from Family Circle. Ingredients:
4 eggs |
3 cups 1% low-fat milk |
1/4 teaspoon ground nutmeg |
1 loaf french bread, cubed (about 8 cups) |
2 tablespoons olive oil |
3 large sweet onions, sliced |
1/2 teaspoon sugar |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
2 cups cheddar cheese, shredded |
Directions:
1. Whisk together eggs, milk and nutmeg in large bowl. 2. Add bread cubes. 3. Let mixture stand 30 minutes, stirring occasionally. 4. Heat oil in large nonstick skillet. 5. Add onion, sugar, salt and pepper; cover over medium-low heat until onion is very tender, 15 minutes. 6. Heat oven to 350 degrees F. 7. Coat 13x9x2-inch baking dish with nonstick cooking spray. 8. Spoon half of bread mixture into baking dish. 9. Top with half of onion mixture. 10. Repeat with remaining bread and onion. 11. Sprinkle with cheese. 12. Bake at 350 degrees for 45 minutes or until puffed and golden. 13. Let cool slightly before serving. |
