We tried these during a trip to Scotland - our hostess brought them home from a church fete. Served with apple juice, they were delicious - just like a crisp cheese cracker. When we got home, I scoured the internet to find this recipe from Cloisters Bed and Breakfast (Talmine, Scotland), which tastes identical. These are fun to make with kids - roll out the dough and use cookie cutters to make any shape you like. Ingredients:
4 ounces oatmeal, finely ground |
4 ounces self-raising flour |
4 ounces margarine |
4 ounces cheese, grated |
1/4 teaspoon salt (optional) |
Directions:
1. Rub margarine or butter into flour and oatmeal. 2. Add grated cheese and salt. 3. Knead dough well. 4. Roll out thinly and cut into rounds, or any shape you choose. 5. Bake at 320°F/160°C for 10-15 minutes, or until crisp and golden. |
