I am going to try this with the lemons from my yard. It came from Paramount Citrus in Smart Cooking the Costco Way. Use the cheese you have. Ingredients:
4 lemons |
pizza dough (for 1 crust, i hope you make your own) |
olive oil |
4 teaspoons garlic, minced |
2 jalapenos, thinly sliced |
1 red bell pepper, thinly sliced (use the color you have) |
2/3 cup parmesan cheese, grated |
2/3 cup romano cheese, grated |
2/3 cup asiago cheese, grated |
1 cup parsley, fresh chopped |
Directions:
1. Preheat oven to 425°F. 2. Grate the peel from 1 lemon. Peel and thinly slice the other 3 and remove seeds. Set aside. 3. On a floured surface, pat the dough out, forming a thin 10-12 inch round crust. Brush with oil and sprinkle with the grated lemon peel. 4. In a large skillet, heat enough oil to coat the pan over medium heat. Add lemon slices, garlic, jalapenos and bell pepper. Saute for 2 minutes. Spread evenly over the pizza. 5. Spread cheese evenly over the pizza and then sprinkle with parsley. 6. Bake for about 20 minutes or until the crust is crisp and the cheese bubbles. 7. Slice and serve. |
