1/4 cup dry breadcrumbs |
2 tablespoons grated parmesan cheese |
2 tablespoons flour |
1 teaspoon salt |
2 medium zucchini, thinly sliced |
1 egg, beaten |
2 -4 tablespoons oil |
Directions:
1. Mix dry ingredients together. 2. Dip zucchini slice in egg; then dredge in dry ingredients. 3. Drop into hot oil in skillet and fry until golden brown. 4. Drain on paper towel. |
