Cheese Filled Bacon Muffins |

These are fit for any company you might have... or just to treat yourself... Ingredients:
1 pound bacon, fried, drained and crumbled |
1 1/2 cups buttermilk pancake mix |
1/2 cup milk |
1 egg |
1/3 cup green pepper |
1/3 cup chopped onion |
2 oz. american cheese, cut into 12 (1/2 in) cubes |
Directions:
1. Heat oven to 425 degrees 2. Grease 12 muffin cups or use baking cup liners 3. Lightly spoon pancake mix into measuring cup; level off 4. In large bowl, combine mix, milk and 1/3 cup rerserved bacon grease and egg; by hand stir until blended. 5. Add bacon, green peppers and onion; stir until mixed. 6. Spoon batter into prepared muffin cups, filling 2/3 full. 7. Press a cheese cube into center of batter on each muffin. 8. Bake 425 degrees for 15 to 20 minutes or until golden brown. 9. Immediately remove from pan and serve warm. |
