Croquettes are a cheesy hush puppy in a french sort of way. Really good with grilled meats and roasted veggies. Indulge. Ingredients:
3 tablespoons of butter |
1/2 cup of flour |
2/3 cup of milk |
1/2 teaspoon of worchestershire |
salt and pepper |
2 egg yolks |
1 1/2 cups of sharp cheddar cheese, grated |
generous pinch of dry mustard |
1 egg beaten |
1/2 cup of milk |
corn flake crumbs |
Directions:
1. Melt butter and add flour. 2. Gradually add milk, blending well. 3. Add egg yolks, cheese, Worchestershire sauce, salt, pepper and dry mustard. 4. Cook over low heat until the cheese has melted. 5. Pour into a pyrex dish and chill overnight. 6. Shape into croquettes (long oval or cylinder) or cut into squares. 7. Beat the other egg and milk together. 8. Dip croquettes into egg milk mixture. 9. Dredge in the corn flake crumbs. 10. Repeat. 11. Fry in deep fat until nicely brown. 12. Serve warm. 13. Daughter likes them dipped in honey mustard sauce as an appetizer. |
