Cheese Chowder

This soup is very yummy. I love to make this with my left over Christmas ham.
Ingredients:
3 cups water
4 cups potatoes, diced
1 cup celery, sliced
1 cup carrot, sliced
1/2 cup onion, chopped
1/4 teaspoon pepper
2 teaspoons salt
1/2 cup butter
1/2 cup flour
1 quart whole milk
4 cups sharp cheddar cheese, shredded
2 cups cooked ham, cubed
Directions:
1. Bring water to a boil. Add potatoes, celery, carrots, salt, and pepper. Cover and simmer 10 minutes. Remove from heat- DO NOT DRAIN.
2. Melt butter in sauce pan. Add flour. Stir in milk gradually. Cook over medium heat, stirring constantly until mixture comes to a boil.
3. Boil 1 minute, stir in cheese until melted. Add veggies with the water. Add ham. Heat thoroughly.
