Individual Cheese Cakes.
Ingredients:
2 - 8 oz. cream cheese - softened
3/4 c. sugar
1 t. vanilla
1 t. lemon juice
cherry or blueberry pie filling
2 eggs - slightly beaten
1 box vanilla wafers
Directions:
1. Put a foil paper cup liner in each cup of a 12 cup muffin pan.
2. Put a vanilla wafer in the bottom of each foil liner in the muffin pan.
3. Beat the remainder of the ingredients together.
4. Fill each muffin cup 2/3 full with mixture.
5. Bake 375 degree for 15 minutes (until set-should be browned).
6. Top with your choice of pie filling.
