Virtually guilt free because I use Philadelphia 95% fat free Cream Cheese. Instead of using pie filling you can top with a piece of fruit. Ingredients:
250 g (8 oz) cream cheese fat free |
2 large eggs |
1 tsp vanilla |
1/4 c white sugar or equiv of sugar substitute |
12 tsp honey graham cracker, crumbs (1 tsp per muffin cup) |
Directions:
1. Put 12 muffin liners in muffin tin 2. Put 1 tsp graham cracker crumbs in each liner and press lightly into the bottom. 3. Blend remaining ingredients (Cream Cheese, eggs, vanilla, sugar) together 4. Spoon Cream Cheese mixture (about 3 tbsp) into each cup 5. Bake at 350 for approx. 25 minutes 6. You can eat without topping or you can top with your favourite topping or a piece of fruit. |
