Boursin in its simplest form uses fresh cream cheese flavored with herbs and garlic or rolled in crushed peppercorns. A coating of chopped nuts and parsley gives the boursin an interesting look and texture. Serve with bread and crackers, or you could stir it into pasta ot dab onto baked potatoes and your favorite veggies. Ingredients:
1/2 - cup butter, slightly sogtened |
2 - 225 grams pack ( 2 cups) cream cheese at room temperature |
1 - cup cottage cheese |
1-2 - cloves garlic, finely minced |
1 - tablespoon brandy |
1 - tablespoon worcestershire sauce |

1 - cup chopped walnuts |
2 - cups slivered almonts |
1 - cup chopped parsley |
Directions:
1. In a bowl of electric mixer, beat butter and cream cheese at meduim speed until mixture is fluffy and well combined. 2. Add cottage cheese and garlic. continue beating for one minute. At this stage, pour in brandy and Worcestershire sauce if using; mix thoroughly 3. To form cheese ball, line a 4-cup bowl with plastic food wrap, leaving edges hanging at the sides. 4. Spoon in cheese mixture and smooth its surface. Chill about 1 hour or until mixture is firm enough to hol its shape. 5. Unmold chilled bowl of cheese mixture onto a cheeseboard or platter. Carefully remove plastic wrap. 6. Garnish with chopped nuts. you may line the board or platter around the cheese ball with plastic shield to catch nut crumbs. Remove the shield before serving. 7. Variations: 8. Instead of a bowl, use a shallow round dish lined with plastic food wrap into which to mold the cheese mixture. Chill until firm. Garnish with chopped nuts and chopped parsley alternating each other in traingle shape. |
