Cheese Blintzes With Cherry Sauce |

I love blintzes and the sweet and sour flavor of cherries over them. Ingredients:
12 crepes |
1 12- ounce container cottage cream |
2 3- ounce pckages creamcheese softened |
1/4 cup sugar |
1/2 teaspoon vanilla extract |
1/4 cup sugar |
Directions:
1. Prepare crepes ( you can use any crepe's recipe) 2. With mixer at medium speed in a small bowl, beat cottage cheese, cream cheese, sugar and vanilla extract until smooth. 3. Spread about 1 tablespoon of cheese mixture on each crepe. 4. Fold one side and then its opposite, side slightly toward center. 5. Roll up the crepe, jelly - roll fashion, in opposite direction. 6. Prepare Cherry Sauce: 7. In cook and serve skillet over medium heat, in 2/3 cup boiling water,heat cherries to boiling. Reduce heat to low; cover and simmer minutes or untiltender. During last minute ofcooking, add sugar. 8. To cherry sauce in skillet, add filled crepes. Over low heat, simmer 10 minutes to heat through. |
