These are delicious savory muffins, perfect as an extra to a hot breakfast or brunch or enjoyed with friends as a snack with an early sports match. Ingredients:
500 g self raising flour |
500 ml carton butter milk |
2 eggs |
pinch of salt |
250 g bacon (fried and finely chopped) |
few sprigs parsley (chopped) |
cup of grated cheese (can mix some parmesan cheese in with the cheddar) |
spring onions – finely chopped |
spoon of mustard |
some ground black pepper |
Directions:
1. 1. Mix buttermilk, eggs, mustard and seasoning in a jug. 2. 2. Mix all other ingredients in a bowl. 3. 3. Add 1 to 2 mix till just mixed together. 4. 4. Scoop onto greased muffin tin (makes 12). 5. 5. Bake at 180 C for 25 minutes. 6. Serve as they come out of the oven. |
