if you do this one right the tomatoes are still chilled and the cheese is toasted and warm Ingredients:
4 large ripe tomatoes, cored and sliced thick chilled |
2 tablespoons chopped garlic |
1/4 cups evoo |
1 pound grated jack cheese |
salt and pepper |
basil |
Directions:
1. set your oven to broil 2. lay the tomatoes into a shallow baking dish 3. salt and pepper the tomatoes 4. sprinkle basil over the tomatoes as much as you like 5. sprinkle the garlic over the tomatoes 6. drizzle the evoo over the tomatoes 7. cover the tomatoes with the grated cheese, don't pack the cheese down 8. place in broiler for 10 minutes 9. when the cheese is melted and toasty on top it's done 10. it could take as little as 7 minutes or as long as 12 minutes the shorter the time in the broiler the chillier the tomatoes will be. the contrast in temps is suprizing |
