Cheese and Spinach Portabellas |

I got this from one of the recipe cards in the produce department at the grocery store. Ingredients:
4 portabella mushrooms, trimed and cleaned |
3 tablespoons olive oil |
3 teaspoons balsamic vinegar |
4 slices tomatoes |
2 cups spinach (uncooked) |
3 ounces goat cheese |
salt and pepper |
Directions:
1. Preheat oven to 350 degrees. 2. Remove stems from mushrooms. 3. Place mushrooms gill side up in baking pan. 4. Drizzle with olive oil and balsamic vinegar. 5. Bake for 20-25 minutes. 6. Remove mushrooms from oven and top with tomato slices spinach and goat cheese. 7. Bake another 5-8 minutes. |
