Cheese and Red Bean Salad |

I haven't tried this yet but it sounds yummy and I wanted to get it on here so I don't have to dig through my recipes when I decide to try it. It's from the Famous Brand Name Cookbook. Ingredients:
1 (16 ounce) container cottage cheese |
1 (15 1/2 ounce) can kidney beans, rinsed and drained |
1/2 cup chopped green pepper |
1/2 cup sliced pimento stuffed olive |
1/2 cup chopped onion |
1/4 teaspoon seasoned pepper |
lettuce leaf |
Directions:
1. In large bowl, combine all ingredients except lettuce; mix well. Chill. Serve on lettuce. Refrigerate leftovers. |
