Cheese and Prosciutto Manicotti Filling |

I found this recipe a few years ago in a magazine. It is a great alternative to traditional manicotti fillings. Stacey Ingredients:
2 cups ricotta cheese |
2 medium eggs, lightly beaten |
1/4 lb prosciutto, coarsely chopped |
1/2 cup grated romano cheese |
3 cups shredded mozzarella cheese |
3 tablespoons fresh parsley, minced |
Directions:
1. In a mixing bowl, beat the ricotta until it is creamy. 2. add the eggs, prosciutto, grated romano, mozzarella and parsley, beat to combine. |
