This is a beautiful tart containing caramelised onions (from my book of tried & tested handwritten recipes). Even people who do not like onions will eat this one. Makes an excellent light meal accompanied by a salad. Also good if you have to cater for vegetarians Ingredients:
140 g flour |
10 ml baking powder |
5 ml sugar |
2 ml salt |
75 g butter, at room temperature |
125 ml milk |
25 g butter |
25 ml oil |
3 large onions, chopped |
125 ml cream or 125 ml milk |
1 egg |
100 g cheese, grated |
Directions:
1. Preheat oven to 220 degrees celcius. 2. Grease a 22cm diameter pie dish. 3. Base:. 4. Sift together the flour, baking powder, sugar & salt. 5. Rub the butter into this mixture until it resembles fine crumbs. 6. Add the milk and mix to form a soft dough. 7. Use a spatula and spread the dough onto the bottom and sides of the pie dish. 8. Set aside until the onion mixture is ready. 9. Filling:. 10. Add the oil to a large frying pan and saute the onions until soft. 11. Cool slightly, then add the onions to the unbaked base. 12. Add the eggs to the cream/milk and mix. 13. Pour this mixture over the onions. 14. Lastly sprinkle the grated cheese over the top. 15. Bake for about 20 minutes and serve warm. |
