Cheese And Macaroni Salad |

This is a unique and tasty macaroni salad. A throw back to the 50's. Ingredients:
2 cups uncooked elbow macaroni |
10 ounces frozen sweet peas |
2 cups shredded cheddar cheese |
4 green onions, sliced, about 1/2 cup |
1/2 cup sliced celery |
1 cup mayonnaise |
1/3 cup sweet pickle relish |
1/2 teaspoon salt |
1 head iceberg lettuce, turn into bite-sized pieces, about 3 cups |
1/2 cup bacon crumbles |
Directions:
1. Cook macaroni according to package directions. 2. Rinse frozen peas under running water to separate. 3. Mix macaroni, peas, cheese, onions, celery, mayonnaise, relish and salt. 4. Cover and refrigerate for 1 hour. 5. Just before serving, toss with lettuce and bacon crumbles. 6. Cheese and bologna salad: 7. Substitute 1 cup cut-up bacon for the bacon crumbles. 8. Cheese and chicken salad: 9. Substitue 1 cup cooked chicken or turkey for the cheese. 10. Cheese and frank salad; 11. Subsitute 3 hot dogs, cooked and sliced, for the bacon. 12. Cheese and shrimp salad: 13. Subsitute 6 ounces of shrimp for the cheese. |
