Cheese and Grainy Mustard Sauce |

Serve with a selection of cooked seasonal vegetables. Place vegetables in an ovenproof dish, spoon the sauce over, sprinkle with extra grated cheese and bake in a hot oven until golden. Alternatively, broil or bake chicken joints, spoon over a little sauce, then brown under the broiler. To prepare ahead: Complete recipe, cool quickly, cover and refrigerate for up to two days. Bring slowly to the boil and simmer for 2–3min. Ingredients:
2 ounces butter |
2 1/2 cups milk |
2 ounces all-purpose flour |
3 ounces sharp cheddar cheese |
1 teaspoon grainy mustard |
salt & fresh ground pepper |
Directions:
1. Melt the butter in the milk in a saucepan and bring to a good rolling boil. 2. Put the flour in a food processor and, with the machine running at full speed, pour in the still bubbling milk. 3. Process for 30sec, scrape down the sides of the bowl with a spatula and add the grated cheese, mustard, salt and pepper. 4. Process for a further 30sec; serve. |
