Cheese and Garlic Mashed Potatoes |

Ingredients:
2 1/4 cups peeled, cubed baking potato (about 1 1/2 pounds) |
1/2 cup fat-free milk |
1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese |
2 teaspoons reduced-calorie margarine |
1/2 teaspoon minced garlic (about 1 clove) |
1/2 teaspoon salt |
1/8 teaspoon ground pepper |
Directions:
1. Place potato in a large saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 12 minutes or until tender. Drain potato; place in a large bowl. 2. Add milk and remaining ingredients. Beat at medium speed of an electric mixer until smooth. |
