Cheese and Bacon Biscuits (Rachael Ray) |

Ingredients:
drizzle of evoo |
2 slices smoky bacon, finely chopped |
1 small box of biscuit mix, such as jiffy or measured mix for 8 drop biscuits * make to package directions |
1 cup shredded sharp all natural yellow cheddar cheese |
1/4 teaspoon nutmeg, freshly grated |
Directions:
1. Preheat oven to package directions. 2. Heat a small skillet over medium-high heat with a drizzle of oil, add bacon and cook 2 to 3 minutes to crisp. 3. Place biscuit mix in bowl, add bacon and 1 tablespoon drippings, nutmeg. Continue to package directions and form biscuit dough, fold in half cheese, arrange drop biscuits on baking sheet and top with a sprinkle more cheese, bake 10 to 12 minutes to golden. |
