An eye opening experience that's great on the tummy. This recipe uses 5 lbs of mashed potatoes. Looks fabulous, tastes better than fabulous. If counting calories go elsewhere..
Ingredients:
5 lbs potatoes, peeled, cooked, drained, and mashed (i leave the skins on
3/4 cup hot milk (approximately)
1 1/2 cups shredded sharp cheddar cheese
1/2 cup whipping cream
salt and pepper to taste
Directions:
1. Preheat oven to 350 degrees F
2. Whip potatoes with enough hot milk to make light and fluffy
3. Season with salt and pepper as you like
4. Pile into greased baking bowl mounding into a volcano shape
5. Make a crater in the center. approx 2 inches deep and 3 inches across
6. Whip the cream, and fold in the cheese
7. Pour cream and cheese mixture into the crater
8. Bake for about 35 minutes, or until lightly browned and bubbly and oozing over the top
