Great for those cold winter evenings. Ingredients:
2 cups boiling water, salted |
1 large potato, peeled and diced |
1 small onion, chopped |
1/2 cup carrot, diced |
1 pinch rosemary |
1 pinch hot pepper sauce |
1 tablespoon chives or 1 tablespoon green onion, chopped |
1 (6 1/2 ounce) can tuna, drained |
1 (8 ounce) can creamed corn |
1/4 cup butter |
1/4 cup flour |
2 cups milk |
3/4 lb sharp cheddar cheese, shredded |
Directions:
1. Put water in pan; season with salt. Add potato, onion, carrot; bring to a boil. 2. Cover and simmer 10 minutes. Do not drain. 3. In another pan, melt butter; blend in flour. Gradually stir in milk and cook, stirring until smooth and thickened. 4. Add cheese and stir until melted. Add vegetables and liquid, tuna corn and spices. |
