Cheddar, Spinach and Mushroom Frittata |

This is a very healthy, tasty and satisfying breakfast that is low in Points for those who watch their waistline. Ingredients:
3/4 cup egg substitute |
1 dash herb seasoning mix (such as pensey's bavarian herb blend) |
1 cup baby spinach, washed and drained |
1 large mushroom, cut into chunks |
1/2 ounce extra-sharp cheddar cheese |
1 pinch fleur de sel |
Directions:
1. Preheat oven to 350. 2. Whisk together the egg substitute and herb blend. 3. Fold in the spinach, mushrooms and cheese. 4. Spray individual small casserole dish with cooking spray. 5. Pour egg mixture into dish and bake for 15 minutes or until set. (If you have a convection oven, you can cut down on the cooking time.). 6. Remove from oven and lightly sprinkle the salt over the top. |
