Cheddar & Scallion Waffle Breakfast Sandwich |

I needed to feed my man his daily breakfast sandwich this morning but was totally out of bread! I thought a savory waffle would do the trick. You can use your favorite cheese, ham or sausage... make it your own like I did :-) Ingredients:
waffles |
2 organic eggs |
1/2 cup milk + more if needed |
1/4 cup melted unsalted butter |
1 cup all purpose flour |
1/2 tsp kosher salt |
1 tsp baking powder |
1/4 cup chopped green onion/scallion (or chives) |
1/2 cup organic white sharp cheddar cheese, shredded |
filling |
fried eggs seasoned with pink himalayan salt and freshly ground black pepper |
applewood smoked bacon, cooked |
Directions:
1. Rub the waffle maker with lightly-oiled/buttered paper towel and preheat your waffle maker. 2. In a mixing bowl, whisk eggs vigorously for a few seconds. Whisk in the melted butter, milk and salt. Add the flour and baking powder and stir until combined. Stir in the cheese and green onion. Let sit for about 10 minutes. 3. Bake according to your waffle maker's specifications. 4. Fill each waffle with eggs and bacon, cut into quarters and serve. |
