Cheddar-Mashed Potato Casserole |

Enjoy this low-tending potato classic with a surprise layer of cheese in the centre of the casserole. Ingredients:
2 pounds yukon gold potatoes, peeled and quartered |
2 tablespoons non-hydrogenated margarine |
1/2 cup sour cream |
1 cup kraft double cheddar shredded cheese |
2 tablespoons oscar mayer real bacon bits |
Directions:
1. Cook potatoes in boiling water in large saucepan 20 min. or until tender; drain. Return to pan. 2. Heat oven to 350 degrees F. Add margarine and sour cream to potatoes; mash until smooth. Spoon half into 1.5-L casserole dish; cover with layers of cheese, remaining potato mixture and bacon. 3. Bake 30 to 35 min. or until heated through. |
