This popper has a fun texture of crispiness outside and chewiness inside. The cheesy, peppery flavor goes great with any other munchies or stands alone with an adult beverage. Ingredients:
2 sticks of butter (1/2 lb) softened (not melted) |
2 cups sharp cheddar cheese, shredded |
2 cups flour |
2 cups rice krispies |
2 pinches of salt |
2 tsp cayenne pepper |

Directions:
1. Mix everything together. Form small balls and place them on an aluminum lined cookie sheet. Press them flat a bit. (I recommend a one bite, popper size. If you bite them it's very likely you'll have fine crumbs on your shirt.) It makes about 60 pieces. 2. Sprinkle a bit more cayenne on top, just for looks. 3. Bake at 375 degrees for 10 to 12 minutes, or until golden brown. 4. Let them cool before you remove them from the pan, or you'll bust a few. 5. The original recipe says they can be made ahead of time and frozen, but I've never done it. 6. Note: The cheese flavor will be subtle if a gentle cheese is used. That's why I recommend a very sharp cheddar. |
